Selections
Both the tea bag and iced tea are accidental twentieth -century American inventions. The
first iced tea was served at the St. Louis World's Fair during a heat wave in 1904. Since
Americans of the time drank primarily green tea, an Englishman was sent to the fair to
introduce black tea from India and Ceylon. But the fair goers weren't interested in anything
hot to drink. To induce the public to try his teas, it was poured into glasses, ice added and
sold as iced tea. The work spread, and iced tea became the most popular summer thirst-
quencher of the fair and later of Americans.
HOW TO MAKE
Try making a delicious summer sun tea! Simply add 2 to 4 teaspoons of tea (depending on
how strong you want tit) to 4 cups of cold water, and place in a glass jar with a lid. Set
the jar in the sun, In an hour, check the tea's strength. Sweeten, pour over ice and enjoy!

Southern Peach Tea
The Dutch were influential in introducing teas and there customs to America
as early as the 1650s. One of the earliest methods of flavoring was the
infusion of tea with peach leaves which reflected the Dutch influence
prevalent at the time. This is now one of the favorite blends of the South.
