Did you all know that coffee has long been the world’s most popular beverage?  Only
water is consumed in greater quantities.  In the United States alone, some 400
million cups of coffee are drunk daily.  The enormous craving for coffee requires the
U.S. to import about two and one half billion pounds annually, over twenty percent
of the world’s exports.  Yet many folks can’t tell one cup of coffee from another.  
Coffee enjoyment can be enhanced by learning to recognize the basic virtue of a
good cup over the faults of poor ones.  Individual taste has a lot to do with the
type of coffee a person may enjoy.  Acidity, flavor and body all act together to
produce the perfect cup.  One thing the consumer rarely has oversight of is the
actual green coffee bean.  Over a hundred different kinds of coffee are imported
into the U.S. each year, and there are different grades, origins and growth
elevations.  One way a consumer can be sure of the green coffee bean quality is by
reviewing the certifications held by the roasters.  As an organic coffee roaster

certification.  TransFairUSA, the licensing authority for organic and fair trade
roasters, have strict compliance standards that must be met semi-annually in order
to maintain certification.  Only the Fair Trade label on a package assures you that

stand by the quality of our product because we know that’s what makes our coffee

FEATURED COFFEE FOR FEBRUARY
Mexican Chiapas:  Mexican coffee originates from South-central to Southern regions
of the country. For that reason, coffees from Coatepec and Veracruz are much
different from Oaxacan Plumas, which are in turn much different from the
southernmost region of Chiapas. Chiapas is a growing region bordering the
Guatemalan growing area of Huehuetenango, and you will find similarities between
those coffees. In general you can expect a light-bodied coffee, mild but with
delicate flavors. Mexican is one of the largest producers of Certified Organic, and
because of the US close proximity, we receive the bulk of fine Mexican coffees in
this market. Mexican coffess are worth exploring for the varity of cup characteristics
they present.
